Hurst was chosen by the Baltimore Ravens with the 25th overall pick in the first round of the 2018 NFL Draft. In the draft, he was the first tight end chosen.
Hurst agreed to a four-year, $11 million contract on June 19, 2018, which included a $6.1 million signing bonus. Late in the fourth quarter of a 21–36 loss to the Carolina Panthers on October 28, 2018, he caught his first career touchdown pass, a 26-yard throw from fellow rookie Lamar Jackson.
Hurst totaled 13 receptions for 163 receiving yards and one receiving score by the end of the 2018 campaign. Week 2 of the 2019 season saw the Ravens defeat the Arizona Cardinals 23–17 as Hurst grabbed his second career one-yard touchdown throw from Lamar Jackson on September 15, 2019.
Hurst caught three catches for 73 yards in Week 14 against the Buffalo Bills, including a career-long touchdown pass from Jackson of 61 yards, which helped the Ravens win 24–17 and secure a trip to the postseason.
Hurst had 30 receptions for 349 receiving yards and two receiving touchdowns by the end of the 2019 campaign. During the 12–28 loss to the Tennessee Titans in the Divisional Round of the playoffs, Hurst caught four catches for 53 yards and a touchdown.
Hurst and a fourth-round pick in the 2020 NFL Draft were traded by the Ravens to the Atlanta Falcons on March 16, 2020, in exchange for second and fifth-round picks in 2020. The agreement was finalized on March 18.
Hurst caught five passes for 72 yards and his first touchdown grab as a Falcon during the team’s 39–40 loss to the Dallas Cowboys in Week 2.
On May 3, 2021, Hurst’s fifth-year option was declined by the Falcons, rendering him a free agent following the 2021 campaign.

On March 15, 2023, Hurst agreed to a three-year contract with the Carolina Panthers. Hurst’s father, Jerry Hurst, tweeted on December 6, 2023, stating that his son was suffering from post-traumatic amnesia. The next day, Hurst went back to practice, although he hadn’t been cleared for contact yet.
